Day 18, 19, 20, 21 & 22

ugh, i know i am so bad at this 30 day challenge. I have been taking pictures, which i guess is the bulk of the challenge, i just haven't had time to blog them. it feels like it has been a really busy week around here- we had a few family members come through for visits (so nice!!), i had several work things going on which ate up a lot of time, and now its finally the weekend! and we can relax and soak up some time with wonderful friends and hopefully hit up the folk festival! yippy! but for now, here are a few pictures from the hectic week.

day 17

chapeau had a fun time at sandy beach yesterday- splashing around with the other pups, running wild and cooling off in the shade. dog days of summer.

oh summer- how i love thee!

sunny days spent at the pool/ park/ sandy beach are totally the best thing ever! these days are made ever more perfect during the final few days of stampede when said pools/ parks/ beaches are nearly vacant of all other people and totally and amazingly mellow! such a great sunfilled weekend with my favourite men! xo

Day 11

We had such a lovely afternoon with Theo and his amazing Mama! We get to babysit Theo on Sunday night and are SOOO looking forward to getting to spend some extra time with this little monkey- we just love him so much and its been incredible watching the boys grow up, and now play together! Ugh, how quickly time flies! Finn had a fun time doing the sign language sign for 'dog' every time he saw Dolce, their cat. Still need to work on that one, I guess! Today's photo of the day: Sweet sweet Dolce.

Frittata for two (and a half) ... and Day 10

I was in the mood for something yummy and rich this morning- our little herbs have exploded the passed few weeks, so I knew I wanted to use them. We also had some tomatoes that had reached their prime and were desperate to be enjoyed. Add a few baby potatoes, some eggs and goat cheese, and a yummy yummy frittata was created!

I used an 8" cast iron skillet for this. I'm sure you could use another kind of bake ware or ovenproof glassware- you just may need to adjust cooking time. This recipe is the perfect amount for two adults and one little one with a keen palate for anything that contains eggs and strong cheeses!

Ingredients:
4 - 6 mini potatoes, thinly sliced- just enough to cover the bottom of the pan
4 eggs
a splash of milk
assorted herbs*, salt and pepper to taste (*I would say chives (or any onion) are a must, but other than that, use what you love! I used thyme, curly parsley and rosemary)
2 - 3 small tomatoes, sliced.
a crumbling of goat cheese*, to taste (*though any cheese would be lovely, I'm sure!)
a bit of butter or olive oil (enough to grease the bottom and sides of the pan)

Directions:
Place potatoes on the bottom of the (buttered or oiled) skillet. Season with a pinch of salt.
Whisk the eggs together with milk, chopped herbs and S&P and pour over the potatoes.
Top with thinly sliced tomatoes and dollops of cheese (as little or as much as you would like)
Bake at 400° for 25-35 minutes, (until eggs are cooked and potatoes are tender!)
Enjoy with the ones you love the most!


* so I forgot to get a picture of the frittata actually cooked, but it looked very much like this.

We had an awesome picnic with Stephanie and Lee this afternoon- Finn is still not walking on his own, and has yet to really take to standing up without holding on to anything, but today he worked up some courage and stood on his own for a good minute! It was so cute to watch, he was so proud of himself and we were all super excited! a wonderful Saturday had by all!

Apples!!

We went to the Sunnyside farmers market tonight and bought a few apples (amongst other delicious goodies.) While walking back, we found Finn having a great time with his new favouite toys.

Beach Boys

It feels like life has been really really busy lately and we haven't had a lot of free time to connect and do the things we love together. Finn adores splashing, swimming and being outside so we thought a trip to the beach would be just perfect (and be just what I needed to regroup and have a few hours to take in the wonderfulness of my little family.) More days like today need to become a regular part of our hectic schedules- such incredible food for the soul.

Day 4

I surrender- I simply can not seem to take photographs of things other than Finn. And truthfully, my 30 day challenge is off to a bit of a half-hearted start. I spent another (LATE) night volunteering at the casino yesterday, so today was definitely a recovery day- and one with very little for inspiration. I did find a few good 'Photo challenge lists' on Pinterest so I will put much more thought and effort into this project in the coming days and weeks. I promise! 

Finn and I got all packed up to head down to the park to go swimming, only to find out there is no water in the kiddie pool yet! Definitely a bit of a bummer, but we still had a nice picnic and played on the swings for a bit before meeting up with Jeff and trekking home. Just one of those days.

Day 2

OK OK, I know I said I would take pictures of things other than Finn, but today I spent the entire day inside a dark, depressing casino (volunteer work for the non-profit organization I work for) so finding inspiration and something worth photographing (all the while not even being sure if you are allowed to take photographs inside a casino) lead to a very small window of opportunities. And this one was just too darn cute.

30 Day Challenge

I watched a sweet TED talk this morning all about trying something new for 30 days. I mean, why not? It's such a simple concept- adding (or subtracting) something from your life for a 30 day stretch. This seems like a very reasonable and manageable time line and feels like it could have some really rewarding outcomes! Being the first of the month, what better time is there than now to start a challenge. I'm maybe going a little easy on myself, but for my first 30 day challenge, I am going to take a photograph every day- and not just photo's of Finn (which is pretty much all I have taken photos of since he was born...) but other beautiful things too! I will post my daily pictures on this blog so you can follow along as I try something new for the next 30 days!
