at our wedding, we opted to have a dessert table filled with all our favourite sweet treats. one of these treats is a recipe passed down from my grandma - almond roca. it was by far the biggest hit of the night with more people than i can remember asking me for the recipe, so i thought i would take a minute to share it.
almond roca is actually the most simple recipe EVER - i make it every year at christmas as it freezes really well, so you can just pull some out when guests are popping over, and it also makes a wonderful gift to give out to those special people in your life. i know sometimes simple and easy recipes don't always have a reputation for tasting quite as amazing as some of the more complex ones, but trust me - people will be blown away by this little treat (and definitely be asking for your recipe. it can be our little secret. ;) )

::ingredients::
3/4 cups brown sugar
1/2 lb butter (dont use margarine. ever.)
1 cup slivered almonds
approximately 1 sleeve of graham crackers
::directions::
preheat oven to 350 degrees
line a cookie sheet with aluminum foil and cover with a single layer of graham crackers
in a pot, melt butter and brown sugar together
stir constantly and boil for about 5 minutes until bubbly and foamy
remove from heat and stir in almonds
pour mixture over top of graham crackers and smooth out to edges gently
bake for 10 minutes
let cool in pan, break roca into random pieces and enjoy!
and totally experiment with this - i have seen it made with Saltine crackers instead of graham, with chocolate chips added, sprinkled with course sea salt, walnuts instead of almonds, topped with marshmallows- really anything would be amazing with this. everyone our in house insists the original recipe, so i never deviate, but would love to hear about any of your concoctions!
